    Ingredients

    Hidden Pumpkin Ingredients:

    • 1 C unsalted butter, room temp
    • 2 C flour
    • 1 C sugar
    • 4 eggs, room temp
    • 2 tsp vanilla extract
    • 1/2 tsp salt
    • 1 1/2 tsp pumpkin pie spice
    • orange gel food coloring
    • pumpkin cookie cutter

    Vanilla loaf Ingredients:

    • 1 C unsalted butter, room temp
    • 2 C flour
    • 1 C sugar
    • 4 eggs, room temp
    • 2 tsp vanilla extract
    • 1/2 tsp salt

    Royal Icing Ingredients:

    • 2 egg whites
    • 1 C powdered sugar
    • 1/2 tsp cream of tartar
    • 1 tsp vanilla
    • Orange gel food coloring

    Instructions

    Hidden Pumpkin Directions:

    1. Preheat oven to 350 degrees. Prep a loaf pan with baking spray.
    2. On high speed with an electric mixer beat butter and sugar until light and fluffy.
    3. Beat after adding each of the eggs, one at a time. Add vanilla, pumpkin pie spice, and salt.
    4. Gradually add the flour beating on low until all ingredients are combined.
    5. Add several drops of the orange gel food coloring.
    6. Pour the orange batter into the loaf pan.
    7. Bake at 350 degrees for about 50 minutes ( loaf will not be completely baked) .
    8. Cool in pan 15 minutes.
    9. Flip the loaf onto a wire rack to cool.
    10. Turn upright to cool completely.
    11. With the cookie cutter in hand measure for the width of each slice.
    12. Cut each slice according to the above measurement.
    13. Using the cookie cutter, cut out the pumpkins. Set aside.

    Vanilla Loaf Directions:

    1. Preheat oven to 350 degrees. Prep a loaf pan with baking spray.
    2. Set each pumpkin slice into the loaf pan (these should reach from one end of the loaf pan to the other end of the loaf pan).
    3. On high speed with an electric mixer beat the butter and sugar until light and fluffy.
    4. Beating after adding each of the eggs into the bowl, one at a time. Stir in the vanilla and salt.
    5. Gradually add the flour beating on low until all ingredients are combined.
    6. Begin by filling in the batter on both sides and in between the pumpkin slices and lastly cover the top of the pumpkin as well with the batter.
    7. Bake at 350 degrees for about 1 hour or until an inserted toothpick comes out clean .
    8. Cool in pan 15 minutes.
    9. Flip the loaf onto a wire rack to cool.
    10. Turn upright to cool completely.

    Royal Icing Directions:

    1. In the first bowl of icing add several drops of orange gel food coloring. Mix well.
    2. Scoop the orange icing into a piping bag with a #2 tip.
    3. In the second bowl this icing remains white.
    4. Scoop the white icing into a piping bag with a #2 tip.
    5. Drizzle the orange and white icing on the top of the loaf cake.
