    Caprese Cast Iron Chicken Meal

    If you are looking for a light, easy meal for the summer months or just a flavorful change of pace for dinner, this Caprese Cast Iron Chicken Meal is the perfect recipe. It’s aromatic and robust with flavor. Just the right amount of food and yummy, healthy ingredients.

    This would also be a great recipe for camping! Precook the chicken before you leave and heat the rest up over the fire. Who says you have to eat unhealthy when you camp.

    Caprese Cast Iron Chicken Meal

    If you are looking for a light, easy meal for the summer months or just a flavorful change of pace for dinner, this Caprese Cast Iron Chicken Meal is the perfect recipe.

    Ingredients

    • 4 Boneless skinless chicken breasts
    • 4 Slices of fresh mozzarella
    • 2 Large tomatoes
    • 2 Avocados - seed removed and quartered
    • 1 Bunch of fresh basil - julienned
    • 4 tbsp. Olive Oil
    • Balsamic Vinegar
    • Italian Seasonings
    • Salt and pepper

    Instructions

    • Season your chicken breast with Italian seasonings on both sides
    • Place your cast iron on the burner set to high
    • Add your Olive oil and allow to bubble and pop
    • Now add your chicken to your pan and cook for 14 minutes rotating every 7 minutes
    • Remove the chicken and set to the side
    • Place your thick sliced tomatoes in the pan and cook for 2 minutes on each side on medium heat
    • Remove your tomatoes and set to the side
    • Place your chicken back in your cast iron
    • Top each chicken breast with fresh mozzarella then your tomato
    • Drizzle balsamic vinegar on top of all chicken
    • Heat your oven to 350 degrees
    • Place your cast iron in the oven and cook until cheese begins to melt
    • Remove from the oven
    • Top your chicken with fresh basil and quartered avocado
