    Crafty Recipes: Tuna Stuffed Tomatoes

    This recipe is a favorite of my 11 year olds. We found a recipe for stuffed cherry tomatoes on the Nick Jr.  site way back when she was 4 and have since modified it to a more “mature’ recipe. 😉

    Tuna Stuffed Tomatoes

    serves 4 {two tomatoes each}

    Ingredients

    *8 vine ripe tomoatoes-medium size

    * Sliced fresh mozzarella-medium sliced (or you can use a bag of shredded mozzarella cheese)

    * 2 family size tuna packets

    * mayo- add as much as you like (we’ve also used ranch dressing)

    *garlic parsley salt (we use Lawry’s)

    * chopped fresh spinach (optional)

    *bacon (optional)

    * glass casserole dish (lasagna size)

    Instructions

    * Mix tuna, mayo & garlic salt (spinach,bacon) together.

    * cut off the tops of the tomatoes and discard.

    * carve out the core of the tomatoes

    * gently add the mixture to the core of the tomatoes. Don’t over stuff.

    * place tomatoes in a lightly greased glass casserole dish.

    * Place slices of mozzarella on top of the tomatoes, sprinkle a little garlic salt on top if you’d like.

    * bake at 425 degrees for 15 minutes or until cheese is melted. In gas ovens you might bake at 400 so the tomato skins don’t burst.

    * Let cool for four minutes, then serve.

    Tuna Stuffed Tomatoes
