Ingredients

Cod ingredients

  • ½ pound cod
  • 1 cup flour
  • 1 tbsp chili powder
  • 2 eggs
  • 2 cups crushed Ritz crackers
  • 1 cup canola oil
  • 1 tbsp dried oregano
  • 1 tbsp dried cilantro
  • 1 tbsp dried dill

Dressing ingredients

  • 1 ripe avocado
  • 1 cup fresh cilantro
  • 1 tbsp vinegar
  • 4 tbsp olive oil
  • juice from 1 large lime
  • 1 tsp garlic salt
  • 3 tbsp mayo

The rest

  • 2 cups chopped cabbage
  • 4 medium flour tortillas or any size or variety
  • cooking spray

Instructions

  1. Lay out 3 bowls in a row. 1st with flour and chili powder then one with the eggs (beaten) and last a mixture of the Ritz and the dried spices
  2. Add oil to a frying pan and raise to medium temp
  3. Dredge cod in flour then eggs then Ritz mix and place in hot pan and cook till golden brown, then dry on a paper towel.
  4. While cod is cooking combine dressing ingredients in blender and run till smooth
  5. Chop up cabbage and mix with dressing in a bowl
  6. Lightly brown tortillas one at a time in a pan with a little cooking spray
  7. Add cod and cabbage mix to tortillas and enjoy
